“I started cooking because I was working in a cubicle in the Twin Towers at Lehman Brothers and I said, ‘I don’t want to sit staring a cubicle wall for the rest of my life.’ A family friend said to me, ‘figure out what you would do anyway, and make that your career and then at least you’ll always be happy.’ So, I quit, went to culinary school, and started cooking. From there, I went to New Orleans [to cook], and 15 years later I’m still doing it.”
