During the 12 days until Christmas break, the King Street Chronicle again presents staff favorites from the holiday season. This tenth edition will not include ten lords a-leaping, but beloved Christmas songs, memories, recipes, movies, and activities.
Song: “Chestnuts Roasting on an Open Fire” performed by Mr. Michael Bublé
Recipe: Gingerbread Truffles
Total Time: Two hours
Quantity: Three dozen
Ingredients:
- One 16-ounce box ginger snaps
- One eight-ounce package of cream cheese (at room temperature)
- One teaspoon vanilla extract
- 12 ounces white chocolate (chopped)
Directions:
- Pulse the ginger snaps in a food processor until fine crumbs form. Add the cream cheese and continue to pulse until combined. Scrape into a bowl and refrigerate until firm (about 30 minutes).
- Line a baking sheet with parchment paper. Roll the mixture into one-inch truffles and arrange on the baking sheet. Refrigerate until firm (about 30 minutes).
- Put the white chocolate in a microwave-safe bowl and microwave at 50 percent power in 30-second intervals, stirring after each, until melted.
- Dip the truffles into the melted chocolate to coat evenly and lift out with a fork. Gently tap off the excess chocolate and return to the baking sheet. Decorate with sprinkles while the chocolate is still wet. Repeat with the remaining truffles. Refrigerate until set (at least 30 minutes).

“Every year at Christmas time, my family and I go skiing. Even though it is super cold out and we are a bit rusty on the slopes, we have so much fun and always get some good laughs in.”
