During the 12 days until Christmas break, the King Street Chronicle will again present staff favorites from the holiday season.  This eighth edition will not include eight maids-a-milking, but beloved Christmas songs, memories, recipes, movies, and crafts.

Recipe: Double Fudge Mint Cookies

Total Time: 45 minutes 

Quantity: 12 cookies

Ingredients:

Cookies:

  • One cup of semi-sweet chocolate chips
  • One cup of flour
  • One-fourth cup of cocoa powder
  • One teaspoon of baking powder
  • One-half teaspoon of salt
  • Five tablespoons of butter
  • Three-fourths cup of brown sugar
  • One-fourth cup of granulated sugar
  • Two eggs
  • One teaspoon of vanilla extract

Mint Frosting:

  • One and one-fourth cups of powdered sugar
  • Two tablespoons of butter
  • Two teaspoons of corn syrup
  • One teaspoon of mint extract
  • Two tablespoons of milk
  • Two drops of green food coloring

Fudge Drizzle:

  • One-half cup of chocolate chips
  • One tablespoon of butter

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.  Line a cookie sheet with parchment paper.
  • Mix the flour, cocoa powder, baking powder, and salt together in a small bowl.
  • Melt the chocolate chips in a microwave for two minutes and stir.
  • In a separate bowl, cream together the butter, white sugar, and brown sugar until smooth.
  • Beat the eggs and stir in vanilla extract until it is uniform.
  • Add in the melted chocolate and continue to stir.
  • Mix the dry ingredients with the wet ingredients until combined.
  • Use a tablespoon to scoop portions of the cookie dough onto a cookie sheet.
  • Bake for eight to ten minutes.  Allow the cookies to cool.
  • Mix together the one and one-fourth cups of powdered sugar, two tablespoons of melted butter, two teaspoons of corn syrup, one teaspoon of mint extract, two tablespoons of milk, and two drops of green food coloring to create the mint frosting.
  • Spoon about two tablespoons of the mint frosting onto each cookie and spread it over the entire cookie.
  • Add chocolate chips and butter to a small bowl.  Microwave for 30-second intervals until fully melted.
  • Let it set for five minutes, and then drizzle the fudge onto the cookies.

Craft: Candy Cane Reindeer

Supplies:

  • Googly eyes
  • Small red pom poms
  • Brown pipe cleaners
  • Candy canes
  • Hot glue gun

Instructions:

  • Using a hot glue gun, glue a red pom-pom onto the tip of the hook of the candy cane.
  • Hot glue two small googly eyes next to each other above the pom pom.
  • Wrap the brown pipe cleaner around the bend of the candy cane.  Use glue to secure it in place.
  • Wrap the pipe cleaner around your finger and then bend them into shape.

“Every year at Christmastime, my family and I go to see the Radio City Music Hall Christmas Spectacular starring The Rockettes.  Unfortunately, because of Covid, we haven’t been able to go since 2019.  The show is a sentiment of Christmas magic and reminds me of when I was little.  I would sit on the edge of my seat every year, eagerly watching the performance.  It is probably my favorite Christmas tradition because it never fails to get me in the Christmas spirit.  I couldn’t be more excited to get back to the tradition this year.  This show and the Christmas cheer that comes with it is something I will never forget.”
